Vegetable moong dal khichdi
A soft, one pot khichdi with moong dal, rice and vegetables. Comfort food for a tired evening, and gentle enough for the whole family.

Ingredients
- 1/2 cup rice, washed
- 1/2 cup split yellow moong dal, washed
- 1 cup finely chopped carrot and beans
- 1 small tomato, chopped
- 1 teaspoon ghee or oil
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric
- 1 teaspoon grated ginger (optional)
- 4 cups water, plus more if needed
- Salt to taste
- Lemon and fresh coriander to serve
Method
- Warm the ghee in a heavy pan or pressure cooker. Add the cumin and let it crackle.
- Add the ginger, tomato, vegetables and turmeric. Stir for two minutes.
- Add the rice, dal, salt and water. Bring to a boil.
- Lower the heat, part cover and simmer for 30 to 35 minutes, stirring now and then. In a pressure cooker, cook for 3 whistles on medium heat.
- Check that the rice and dal are soft. Add hot water if you like it looser.
- Finish with lemon and coriander. Serve hot with curd.
Richa's tips
- Use any vegetables you have: lauki, peas, spinach or pumpkin all work.
- For older adults or small children, cook it a little softer and thinner.
- Cool leftovers quickly, keep them in the fridge and reheat until steaming hot.
